Coco’s Cookies is finding sweet success following its move to the Fittons West Plaza.
Owner and baker Nicole Hepinstall moved the three-year-old business from 247 West St. N. to 325 West St. N last weekend and opened up in the new shop on Tuesday.
“We really struggled in our other unit,” she explained. “We were trying to hold out for the construction across the street to wrap up in 2024, but the unit itself was falling apart.”
In addition, the parking lot was "really hard to get in and out of and we only had two spots for customers.”
As Coco’s Cookies outgrew its original location, she knew it was time for a change.
“We needed to up-size to be bigger and better,” Hepinstall said. “We want to expand our team, take on more things, and eventually offer catering.”
Hepinstall had help from family, friends, and community members who moved everything over from the old location into the new one in just one weekend. Her fiancé, Tyson, a contractor, constructed the unit from scratch to fit the bakery.
“Our customers have been coming in and are in awe of how nice it looks in here,” she said. “We wanted it to feel like you are walking into grandma’s kitchen, and you get that nice warm feeling.”
Because of the parking situation, construction, and other issues, Hepinstall says the business was not realizing its potential at its former location.
“Now that we have moved over here, we are doing well,” Hepinstall said. “It’s a higher traffic area with people coming in and out of the plaza.”
Hepinstall is confident that her business will be back on track in no time with the new location.
“We are very excited,” she said. “It’s a nice change of scenery.”
